Vegetarian Cookery Classes


Learn how to create delicious vegetarian and vegan cuisine. In our cookery classes you are shown how to combine healthy produce with aromatic Indian spices. Impress friends and family, and literally spice up your whole life. Vegetables, grains, rice, beans, fruits, creamy coconut, dried fruits and herbs are combined in a myriad of different ways to produce tasty delicacies.
For better of for worse, the main cultural influence visible in the world today comes from Europe (or Euro-American). In history when Europeans first started travelling around the world in ships just over 500 years ago, India was top of the list as a port of call. And what was one of the main reasons for travelling to India initially?  ....spices!

Tired of slabs of meat and bread, the competing aspiring little empires of Europe were collectively thinking: well, if we're going to conquer the world and teach tribes of natives everywhere about culture, we'll have to improve our own diets. Word caught on that wealthy India was the place to be for food.

Tasty Vegetarian Foods

Our retreat meals are cooked by Carmen, our chef. Carmen learned to cook first from her mother in Panama from age 7. Later, from age 18, she learned how to cook delicacies and tasty dishes with the head monk at the Hare Krishna temple, Hari Chakra Das. She began to learn techniques of Indian cookery. When several visiting Swamis tasted her cooking over the years, they blessed her cooking to always be amazing, and it seems it's turned out that way, as cooking is about love and consciousness - as well as expertise. Carmen teaches people cookery.

Carmen (pictured) cooks for all our retreats here at Mandala House. Carmen has a relaxed, laid-back and cheerful way of sharing her cookery tips.
Learn how to make the likes of:
1. Vegetarian curry of various kinds (we prefer the term 'subji')
2. A variety of tasty basmati rice dishes
3. Breads like chapati, puri, etc.
4. Samosas and pakoras (spiced vegetable fritters)
5. Halava and sweet creamed rice
6. Kitchari
7. We also teach European dishes like exotic salads, vegetarian lasagne, Sheppard's pie, pizza, falafel wraps etc.


Two points to note: (1) ingredients may be sourced in any modern supermarket, and (2) the preparations we make are generally fairly simple to re-create yourself when you go back to your own homes. 


Vegetarian Recipes
Carmen is passionate about food. She is only too happy to share her knowledge in cooking and baking. During the class, you are either provided with printed recipes of what you learn, or you are encouraged to take notes during certain classes - this helps you to have your thinking cap on. Her eagerness to share some tips led her to publishing her own Vegetarian Cookery Book.  Carmen's cookbook is available in our retreat centre shop or can be ordered by emailing us.
